Steaks, chops, and roasts are all labeled with a USDA grade, and each USDA beef quality grade is a measure of a distinct level of quality. In fact it takes eight grades to span the range. They are USDA Prime, Choice, Select, Standard, Commercial, Utility, Cutter, and Canner.

The grade most widely sold in Lincoln grocery stores is USDA Select. Select grade beef is very uniform in quality but, because it has less marbling, it may lack some of the juiciness and flavor of the higher grades.

The USDA Choice grade beef has more marbling which adds flavor, and is of very high quality. Choice roasts and steaks will be very tender, juicy, and flavorful. This is the grade of beef that we sell at Leon’s and is one of the reasons our meat is so delicious.

The Butcher Block Meat Department also AGES all of our beef a minimum of 21 days. True beef flavor is actually fully developed after about 11 days of aging, but the beef flavor continues to increase with aging time.

Aging also increases meat TENDERNESS, and that’s a combination that is guaranteed to dazzle guests and family members at the dinner table every time! Whether you like it rare and juicy or rich and well done, Leon’s has the best meat around.
